Honey Chipotle Chili


So I'm not a huge fan of chili, but back in October, our ward had a Halloween party, which involved a chili cook off. This was the winning recipe.* Now I like chili. It is sweet and spicy and just good. We served it with baked potatoes one night along with a dollop of sour cream and a little grated cheese. It also freezes great if you don't have 8-10 people to feed. 

1lb ground beef
1 green bell pepper chopped
1 red bell pepper chopped
1 med yellow onion
1tsp crushed red pepper flakes
11/2 T chipotle pepper minced
2 cloves garlic minced
1 tsp crushed black pepper
11/2 tsp kosher salt (why kosher, I don't know)
1/2 tsp cayenne pepper
1 T canola oil
2 8oz can diced tomatoes 
1 4oz can diced green chilies
4 cups canned kidney beans rinsed
2 cups tomato soup
3 heaping spoonfuls of honey
1 cup brown sugar 

If you have canned ingredients that don't match some of these sizes, just get close. That's what we did and it was still good.

In a large pot, combine beef, bell peppers, onion, and spices together with the canola oil. When beef is browned add remanining ingredients. Simmer for 45 min stirring occasionally. Serve with sour cream and cheese or whatever you want!
